This bread will change your life. In Copenhagen they call it Sternalderbrød or Paleo Bread. I call it the 'guilt-free' bread.
We can find bread is everywhere around us. To be honest I am not a big fan of 'white' bread. There is simply not a single good thing about it. It is mostly made of white flour, contains empty calories, lacks nutrients and does not even fill you up. Indeed the high amount of starches make your blood sugar rise that will make you crave more food after all.
Actually, did you know that pretty much every single bread you buy either in bakeries or supermarkets are actually not more than industrial made mass product? The industry mostly uses cheap flour. Its often being recycled grinding and pulverising unsold bread into 'new' flour which is then used to make new bread and rolls. Dark bread is simply coloured with molasses or food colouring making it appear more healthy.
Moreover, syrups, milk powder or preservatives are added. I mean how come a bread lasts for like 2 weeks without getting dry and mouldy. Yummy, isn't it? So this is what you feed your body. Another issue is the added gluten. In order to make the bread become fluffy and rise nicely more and more glutinous flour is added to the dough.
No wonder why people are increasingly suffering from celiac disease. Our immune system reacts as the body is just not used to or made for eating that many starches and carbohydrates. The gluten damages our bowels and digestive wall causing inter alia the Leaky Gut Syndrome.
So, ask yourself - if you feel tired after having a huge plate of wheat pasta or toast? Probably you feel a headache coming after lunch? You might say: that must be the weather today! -For sure. NOT. In most of the cases it is your body trying to tell you that something is wrong.
I instantly fell in love with this bread recipe when I moved to Copenhagen. It is not the typical light and fluffy bread. It more or less reflects the winter weather - dark, crisp and intense.
Besides being easy to make it has all benefits: It is high in protein but low in carb. It simply contains 'clean' ingredients nuts and seeds. It is gluten-free and high in fibre for optimal digestion and nutrition.
ALL YOU NEED:
- 5 eggs (free-range at least)
- 10 ml olive oil (you can also use melted coconut oil)
- sea salt
I used a pre-packed danish 'Sternalderbrød' mix. It basically contains:
- 100g flaxseed
- 100g sesame seeds
- 100g pumpkin kennels
- 100g sunflower seeds
- couple of hands full of almonds, hazelnut and walnut
THIS IS HOW YOU DO IT
- Mix all the dry ingredients together in a bowl
- Add eggs and olive oil
- Stir well
- Pour the dough into a square baking pan
- Bake in the oven for approx. 50-60 mins at 160°C
Let cool completely before slicing
