Have a thought: what do you love most about Christmas?
To be honest, I am not the biggest fan of the actual Christmas holiday fuzz (I would rather spend the Christmas days somewhere warm instead). Nonetheless, I love the whole pre-Christmas atmosphere. Hot wine punch dates or charcoal roasted chestnuts on the Christmas markets. Not to mention all beautiful decoration and the christmassy mood in the air. But I think what I love most about it are - of course Christmas cookie baking.

Being in kindergarten and primary school this German Christmas song was one of my favourites. When I hear it somewhere to it today I still can't get it out of my head for hours.
Actually, my baking career did not start off very successfully. I remember the annual Christmas cookie baking of me and my mum and me ending in a complete disaster.
Same procedure as every year.
Oh, my favourite where traditional butter cookies. I loved cutting them into little angels, reindeers or santas and decorating them with nuts, icing and colours. Well, every single year, we managed either mess up the dough even before baking or to burn all cookies. Second happened pretty much every single year. There was hardly a single eatable cookie left. Indeed, cookie Santa, his angels and reindeers looked a lot like they had been to the solarium way too often. Fail.
The burned black angels, stars and santas cookies ended up with a red bow tied to our Christmas tree. And my mum running to the store buying big boxes of cookies and gingerbread.
Trial and error. But luckily you learn from your mistakes.
I wish someone would have told me about this recipe when I was a kid. Seriously, it would have made my Christmas. But better late then never.

It is a great one for everyone. Practically is foolproof. You can NOT fail. Trust me. Either kitchen queen or hopeless baker. You can easily impress your girlfriends, mamas and mums-in-law.
ALL YOU NEED:
- 1 -2 cups of rolled oats (I used gluten free oats)
- 2 ripe bananas
pick whatever is your favourite
I tried 4 different toppings pumpkin kennels, goji berries, figs and cranberries
THIS IS HOW YOU DO IT
- Roughly mash the bananas
- Add the oats and combine well
- Form dough into cookie and place on baking sheet
- Add your favourite topping
- Bake for about 15 mins at 180°C
You want them to be soft and chewy, so don't over bake!
