COCONUT MACARON SNOWBALLS

As I already mentioned, I really enjoy the traditional cookie baking before Christmas. A get together with the girls, drinking tea, gossiping, listening to the same christmas playlist over and over... And baking! Ah, who does not like the smell of freshly baked goods in the apartment. 

Have a look how last weeks Christmas baking looked like - Amazing results! Of course there were also  some 'naughties' involved as well :) Its all about balance, isn't it?

I found another healthy recipe for your christmas baking. These coconut goodies do not only look great they are actually really good for you - gluten free, sweetened with honey only and made within in the twinkle of an eye.

Benefits of coconut

Coconut is my favourite super food. It has so so many positive attributes for your health. Honestly, I could make a never ending list. But, just to mention a few: It is gluten free, high in fibre and essential fats, low glycemic index and helps to reduce sweet cravings. Coconut actually contains anti-inflammatory and antiviral healing properties aiding the overall immune system....

That should be enough for now - it's time to make these lovely coconut snowballs.


ALL YOU NEED:

INGREDIENTS:

makes one baking tray

 

  • 6 large egg whites
  • 2 tbsp honey
  • 1 pinch of sea salt 
  • 2 cups shredded coconut
  • pure vanilla 
  • lemon zest, grated

THIS IS HOW YOU DO IT: 

 

  1. Separate eggs, add salt and whisk until stiff
  2. Fold in honey, vanilla and coconut and grinded lemon zest 
  3. With help of a tablespoon form little coconut snowballs and place onto lined baking sheet
  4. Bake at 200°C for 10-12 minutes, until macaroons are golden brown
  5. Cool and serve

A fluffy dream of coconut. Now, lets just hope that this won't be the only 'snow' for this year.
