I love panackes. In Sydney it got a tradition for me and my roomie. Tired or hungover - call for pancakes! It just makes the day better. Topped with loads of fruit- vitamin addition!
This morning I was craving pancakes. I made a batch for one person. If you are more just double the ingredients.
I made up a recipe without flour or milk and it turned out really well. Nicely moist and and crispy. Instead of wheat I used coconut flour. You can easily make coconut flour yourself. Simply buy 'normal' desiccated/shredded coconut and grind it finely in your mixer.
You can top it with whatever you like. I picke blueberries and lemon zest! So yummy!
It is gluten free, low carb, vegan, paleo
Linseed keeps you satisfied. Make sure that you let them soak in water enough time. Otherwise u will get stomach ache as this procedure will happen in ur belly. Not nice!
Coconut - is my favourite superfood. Coconuts are full of nutrients they contain important vitamins and dietary fiber and protein. Coconut oil is composed of saturated medium chain fatty acids (MCT) and rich in lauric acid, which boosts the immune system and destroys harmful bacteria and viruses

The apple cider vinegar also digestion by stimulating the formation of digestive juices. It works well against cravings, regulates blood sugar, supports fat loss and fills you up. Make sure you buy organic cider.
My aunty makes the best pancakes. She told me the secret of how to bake the perfect pancake. I will share that secret with you. But shhht dont tell her!!
Vic's Aunty's Tip
So, the key is pretty much to not turn the heat to high an to be patient. Dont overdo with (coconut) oil otherwise they will get to greasy and not crispy enough.
ALL YOU NEED:
1 pinch of sea salt
1/2 tsp cinnamon
1/2 tsp baking soda (gluten free)
4 tbsp coconut flour
1-2 tbsp linseed, soaked
1 tbsp apple cider
coconut oil for frying
blueberries and lemon zest for topping
THIS IS HOW YOU DO IT:
- Let the linseed soak with 2 tablespoons of water
- Place all dry ingredients (coconut flour, salt, cinnamon, baking powder) in a bowl and whisk until well combined
- Add eggs, soaked linseed, apple cider and wisk until you have a nice dough - you want the dough to be heavy and not to runny..
- Add coconut oil to pan and heat on low temperature
- Add two tablespoons of the batter and let cook slowly in the oil. It will give little bubbles on the top,
- Spin pancake and cook from the other side
- Top with blueberries
