When it comes to cakes, I am a big fan of the simple recipes. I think this date cake just outstripped all of my other easy cake recipes. Have a look at this piece of healthy awesomeness.
Low carb, gluten free, refined sugar free. Promise!
The cake is practically low in carbs as it contains only crushed almond. I used corn starch with is naturally free of gluten. Dates are sweet enough so there is no need of any kind of additional sugar. The orange grind and juice give the cake a fresh and juicy flavour. It is a little bit of work as you need to blanch and roast the almonds. But it is totally worth it - you will love it!
ALL YOU NEED:
400g fresh dates, pitted and chopped
150g almonds, blanched
3 tablespoons coconut oil, melted
4 eggs, separated
Vanilla seeds from a vanilla pod
3 tbps cornstarch (naturally gluten free)
Orange zest and juice of one orange
1. PREP THE DATES
2. HIT THE ALMONDS
3. SQUEEZE THE ORANGES
4. CRACK THE EGGS
ADD IT ALL UP
BAKE IT, BABY!
THIS IS HOW YOU DO IT:
Blanch the almonds with boiling water, let stand in 5 minutes, peel off the husks with your fingers
Roast almonds for a few minutes 200 ° C in the oven, cool slightly and crush in mortar or blender
Separate the eggs
Beat the egg yolks with the vanilla pod until light and fluffy, sift in the cornstarch and stir .
Combine chopped dates, chopped almonds , melted coconut oil and orange juice and zest, stir carefully
Beat the egg whites until stiff and fold into mixture
Bake dough for about 20-25 mins at 200°C
Turn off the oven an let the cake slowly cool another 10-15 min
Let cool and serve dusted with powdered sugar.
If you like some extra crunch in your cake - keep some of your whole roasted almonds before crushing and add them to the dough. It will also look very nice when you slice it.
