CRISPY RAINBOW TROUT


 

This morning I got up early to catch two little fresh rainbow trouts from the market. Copenhagen is great as it is close to the sea and you can get very high quality and fresh seafood.

Fish.

Fish is so healthy for you. Food nutrients recommend to eat fish at least twice a week as a part of a well-balanced diet. Generally, fish provides your body with a lot of healthy omega 3 fatty acids and Vitamin B and D. These essential nutrients keep your heart and brain fit and healthy. Omega 3 fatty acids can not be produced by our bodies, so we need to get them through the food which we eat. They are found in every kind of fish, especially trout.

Time get to get fishy!

Pan frying is the easiest and I think one of the tastiest ways to prepare fish. This is cracking recipe: First, it takes you only a few minutes, the fish looks really impressive on the plate and last it is super healthy and delicious. I just love the crispy skin. The lemons gives the rainbow trout a very nice flavour. Frying the fish in the pan makes sure that the fish stays juicy while the skins get nicely crispy. 


BBQ summers

It's time to get roasted.

My recipe also turned out great on a BBQ. Simply put it on the charcoal grill instead in the pan and grill it for about 8 minutes on each side. The skin will become super black. Don't be afraid of it! You can simply peel it off. I love the BBQ version as it adds a nice smoky flavour to the rainbow trout :)

Other add ons: freshly homemade sea salt and rosemary bread, Annas beet rood quinoa salad with apple and apricot, a green garden salad and gluten free coconut chocolate brownies. Janas traditional German potato salad and Ginevra and Ceci's stuffed grilled peppers.


ALL YOU NEED:


INGREDIENTS:

for two or three

  • 2 whole rainbow trouts, washed and cleaned

  • 1/2 cup cornmeal (glutenfree, yay!)

  • one bunch of parsley

  • sea salt and black pepper

  • one lemon, sliced 

  • garlic, sliced

  • butter, for frying


wash the fishies and fill them with lemon, parsley and garlic


THIS IS HOW YOU DO IT:

  1. Fill the trout with lemon slices, garlic and parsley, season with salt and pepper
  2. Stab the fish with two toothpicks to make sure the filling does not drop out
  3. Rub fish in corn meal on both sides
  4. Add butter to pan and melt, add fish and fry until the skin crispy (5-7 minutes at medium heat)
  5. Flip and repeat on other side
  6. Serve with a green salad or veggies of your choice - enjoy!
