Ch-ch-ch-chia! Chia is the superfood of 2014. And I believe it will become even more popular this year.
I have been using Chia seeds forever to add it to several of my dishes, but I never made a real Chia pudding. Now its the time!
In Sydney and London I found ready made chia pods sold at Coles, Wholefoods or even Pret à Manger. This is SO ridiculous as it is made super easily at home. Just a few ingredients and its done. I like to make it in a jar which is perfect for taking it to school, uni or work. It is a simple and healthy snack or dessert. I love Chia Pudding for breakfast. The ultimate start in the day.
To be honest, I love all kinds of puddings. Rice pudding, porridge and now Chia pudding. I think I must be the texture.
The Chia pudding is for everyone. It is raw, so no need to cook - easy! You can make it lactose free and vegan, like me by using plant based milk like Rice, Almond, coconut milk or water or my homemade Cashew milk (recipe is going to follow up, I promise!).
Chia seeds are a considered a superfood. They contain heaps of important nutrients, omega 3 fatty acids, protein, fiber, and minerals including calcium. If that was not enough up to three times more than a serving of milk. Unlike flax seed, there is no need to grid them to absorb the healthy nutrients. The seeds are able to absorb up to ten times of their weight in water and expand. Therefore make sure that you let the seeds soak before you eat.
3 tablespoons of Chia = 1 cup of liquid for the perfect texture
ALL YOU NEED:
- 3 tbsp of Chia seeds
- 1 cup of (plant-based) milk, I used my homemade Cashew Milk
- one pinch of fleur de sel
- 1/2 vanilla pod
- one fig, for topping (Feel free to use any other fruit or nuts you love. Berries match perfectly as well)

THIS IS HOW YOU DO IT:
- Combine the chia seeds, cashew milk, sea salt and the vanilla in a sealable jar.
- Shake it baby!
- Refrigerate overnight
- To serve top with fig and EAT!
