SUNDRIED TOMATO FETA ZOODLES

Have you ever heard of ZOODLES? It is the revolution in the kitchen!  Zoodles are pretty much Zucchini Pasta. All you need is a spiralizer. And I tell you it is an investment worth every penny! 

 


How to make Zucchini Noodles? 

Many of you peeps have asked me now which sort and brand of spiralizer I use. In order not having to answer everyone individually I will copy the amazon link right here:

Your spiralizer will slice your ordinary veggies to noodle-like spaghetti shapes.

All kinds of veg Noodles.

Make your Spaghetti, Linguine or Noodles made out of zucchini. The best thing about it: GUILT FREE - NO CARBS and GLUTEN FREE.

Be creative with your veggies. Zucchini, Cucumber and carrots work best to spiralize. Instead of those boring carrot sticks,l zucchini slices or cucumber chopped in sad half-moons you will have an extraordinary dining experience. It is so much more fun dining on voluminous ribbons of vegetable delight.

You can either have your Zoodles raw or steamed, topped with your favourite bolognese, carbonara sauce or simply with pesto. Make a pasta salad or add your noodles to your Pad Thai soup.

Copenhagens 'hyggeligst' Sunday Brunch

Our last week's amazing Sunday brunch. Aw, we have had so so much to chose from! It was a feast!

So, what's your favourite for brunch?

Johanna brought a sweet fruit salad. Anna freshly baked some homemade rolls with chia seeds and made a vanilla cream pudding. Rhoda delighted us with her lovely gluten free French Tarte au Chocolate and warm and fluffy pancakes. Jana made some amazing fresh Tomato Mozzarella. And I made the raw Zoodle salad. Moreover, we had Salmon, Avocado, a large cheese variety and fried eggs... Heaven!

ALL YOU NEED:

 


INGREDIENTS:

  • two organic zucchini, spiralized
  • a few sundried tomatos, chopped
  • one handful of pine nuts, roasted
  • feta cheese, crumbled (I used actose free) 
  • grated zest and juice of one organic lemon
  • fresh basil leaves, chopped

Screw the slutty carbs. Get on the spiralizer!

some fresh herbs

grate lemon rind

roast the pines and crumble the feta on top

grab your fork and get in there!

I think this beats pasta any time.
