BETTER THAN POPCORN SMOKED EDAMAME

The perfect two: Angelina Jolie and Brand Pitt. Peanut butter and jelly. Movies and snacks. 

Tonight its my weekly casual movie night. There is hardly anything that beats that quality me-time. Hair up, sweat pants and a good film. And what do you need for movies? SNACKS!

I was quite bored usual popcorn. So lame. Chips? Never liked them! Dark Chocolate... boringggg. So I found this awesome snack. These paprika smoked roasted edamame are the ultimate healthy nibble.. Not only are they a lot better than popcorn. And they are addictive. They're crunchy on the outside and chewy in the middle. The sweet and nutty flavor of the edamame is balanced by the smoked paprika and the fresh lemony flavour.

Edamame are actually shelled soy beans. Great news! A lot of plant based protein and rich in fibre.

So easy. Starting with a bag of shelled frozen edamame (you can get them in any good asian supermanket), toss the beans with some lemon juice and smoked paprika seasoning, and chuck them in a hot oven. The result: you will get wonderfully chewy and crispy puffs with an amazing taste of roasted nuttiness.

 

Here you go: my latest obsession - smoked paprika.

It is amazing! It tastes like bacon but it is not. Perfect for everyone loving a smoky flavour but either vegetarian or vegan or just avoiding red meats.

You can sprinkle your smoked paprika seasoning on anything. It goes well with eggs, avocado, asparagues... add it to your soup, salad dressing or mix it into your meat seasoning. 

 



ALL YOU NEED:


INGREDIENTS:

  • one cup of edamame beans
  • juice of half a lemon
  • one teaspoon of smoked paprika seasoning 


THIS IS HOW YOU DO IT:

  1. Pour the edamame in a strainer and run under warm water for a few seconds and dry off
  2. In a bowl, toss the edamame with the lemon juice salt and smoked paprika
  3. Spread the edamame in a single layer on a sheet pan and roast for approximately 15 minutes until golden brown
  4. Remove the pan from the oven and transfer the roasted edamame to a serving bowl.
  5. Enjoy nicely crispy
