Vietanemese-style Summer rolls.
They are SO good and versatile. I love to eat them as a hot-weather appetiser or light lunch. The fact that they are easy to prepare, filled with raw veggies and can be eaten cold which makes them a great on-the-go or take-tow-work-food. Summer rolls are also such a great dish to make when having friends over.
No matter if you are vegetarian, vegan or paleo.
All can eat together. Everyone can make their own and there is a a lot more interaction as having a simple served dinner.

You dont need to prepare much in advance, just chop the veggies, and place everything on the table. Once all ingredients are predated the rolling fun begins. All you need to do is to softenl the rice paper sheets n water and use them to wrap the filling, pretty much like a burrito. You can dip them in any kind of sauce you like. We made a sesame oil-coriander-soy-sauce with tasted great with cucumber and prawns. i I love the fact that you are eating with your hands as I am convinced it makes the food taste a lot better.
We made these healthy and light Vietnamese-style summer rolls the other day at Johannas place. We decided to fill our rolls with cooked prawns, rice and a lot of raw veggies fir flavour and chrunch.. But go- just see yourself.
ALL YOU NEED:
for five friends
- One red capsicum, finely sliced in stripes
- A few carrots, finely sliced in stripes
- One cucumber, finely sliced in stripes
- 1/2 red cabbage, finely chopped
- 500g of shrimps, cooked
- 2 cups of brown rice, cooked
- One pack of rice paper
- Soy sauce
- Fresh mint and coriander leaves
For the sauce:
- One big knob of ginger, finely grated
- one cup of soy sauce
- three tablespoons of sesame oil
- coriander, roughly chopped
- one tablespoon of sesame seed
- one red chilli, chopped
- Juice of one lime
