ALL YOU NEED:
I tend to buy my bananas in bulk.. However, I experience that (very annoying!) issue that they are lying around for ages.. Being green as they are they seem to never become ripe EVEr. And ALL OF A SUDDEN they turn brown altogether looking like these nanas in the picture right above.
I mean, its not that I don't like to eat them ripe or even over ripe.I think they are the sweetest that anyway. However, what to do with not only one overripe banana but with a whole bulk (if you are actually not planning on going to banana island...)
Well, I decided to make a beautiful banana bread! It is incredible moist with a subtle sweet taste. It is also nice breakfast alternative to a banana porridge.
I love mine either warm and straight from the oven or toasted with melted salted butter on top
for one banana bread loaf
- 4 medium overripe bananas, mashed
- 2 cups flour, I used gluten free
- 1 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1/4 teaspoon sea salt
- 1 teaspoon vanilla extract
- 1/2 cup coconut oil or butter, melted
- 3/4 cup (coconut) brown sugar
- 2 eggs
- 1/2 cup chopped walnuts
How to make the best and most beautiful banana bread.
THIS IS HOW YOU MAKE IT:
Cream together sugar and butter in a mixing bowl for about 4-5 minutes until light and fluffy. Gradually add the eggs, one at a time and mix well.
On a plate mash the overripe bananas with a fork. Mix in the milk and cinnamon.
In another bowl mix together the dry ingredients: flour, baking powder, baking soda and salt.
Add the banana mix to your egg mixture until well combined. Then slowly sift in the dry ingredients and the walnuts and mix until the flour just disappears - you dont want to over do it!
Pour the batter into a buttered pan and bake in an pre-heated oven at 180°C for about one hour until golden brown and baked through.
Let cool on rack before slicing into pieces.
Serve with salted butter (may sound weird but it is the very best!)
In order to make sure the cake is well done I use a toothpick. If I stick it in and it comes out clean it is PERFECT.
