The Vegan Healthy non Sugar Cookie Recipe.
This year I thought about another healthy christmas cookie recipe. And I came up with a healthy and easy carrot cake cookie recipe. Carrot Cake cookies might seem a bit odd. I found they are a little similar to the traditional sugar cookie recipe - simply adding a lot of spice and fibre. The ingredients used for my carrot cake cookies are vegan only and very low fat.
My easy and healthy Carrot Cake Oatmeal Cookies.
First of all, it is more than the simple carrot cake you know. These are little tiny homemade carrot cake COOKIE BITES made with oatmeal and grated carrots. The ginger gives it a nice spicy zest while the dates balance with with a nice sweetness.
The original recipe was a vegan gingerbread pumpkin cookies. But I changed the recipe and made them healthy vegan cookies made with CARROT and Apple. For spicing I used a mix of the four spices: cinnamon, cloves, nutmeg and anise -- also known as Pumpkin Pie Spice Mix. They go amazingly well together, giving the cookie the ultimate christmassy flavour.

ALL YOU NEED:
- two organic carrots, grated
- one small apple, grated
- one small knob of ginger, grated
- 8-10 dates, pitted
- one tablespoon of chia seeds
- two cups of rolled oats
- one cup of desiccated coconut flakes
- one pinch of sea salt flakes
- 1/2 cup of maple syrup
- one teaspoon of mixed spice - cinnamon, cloves, anis and cloves
THIS HOW TO DO IT
Chop the dates, grate the apple, carrot and ginger.
Combine all ingredients.
In a bowl, add the grated carrot, apple and ginger. Add the dates and maple syrup. Add the coconut flour, the salt and spices.
OH YES. The cookie dough tastes also great by itself! It is completely vegan - you can simply s p o o n in :)
Now the oatmeal.
As I did not use any eggs the oats will do their part in holding the cookie together.
Soak them in hot water for a little while and then add them to your carrot cake batter.
Combine the two.
Stir until the mixture is well combined.
Bake it, baby!
With the help of a spoon form the dough into cookies and place them on a lined baking tray.
Bake in the pre-heated oven for about 15 minutes.
Ready to eat!
To ensure the cookies stay soft and chewy, we’ll underbake them ever so slightly. Just by a hair! Pull them out when the centers still feel a little underdone, and let the cookies cool for a full 10-15 minutes on the warm baking sheet. This allows the centers to finish cooking through without the outsides turning crisp and crunchy. The cookies will stay soft for an entire week—if they last that long!
