This red cabbage salad with figs it a great dish in winter. It is not only super colourful but also really healthy. You can easily make in in advance because the longer it soakes the better it gets.
What is important, is to really rub and massage in the dressing (use your hands!) into the cabbage as it will give the salad more flavour. You really want the juices to come out! You can taste the love you put in :)
I love the taste of the cabbage salad as the acid of the apple cider vinegar balances super well with the sweetness of honey and figs.

I was in Copenhagen last weekend. For me this place is a source of inspiration. Everyone eats so healthy there and cares for their bodies. I had a beautiful salad at Tørvehallerne in the city centre. One of them was also a cabbage salad. Since them I was craving this healthy beauty, so I decided to make it here in my new home in Berlin.
Red cabbage is a great healthy vegetable which is super versatile. You can eat it raw in a salad or cooked as a side dish. Red cabbage is low in calories and high in nutrients and antioxidants that help to detox your body.
ALL YOU NEED:
for 3-4 portions
- 1/2 red cabbage, finely grated or shredded
- 2 carrots, grated
- 1 apple, grated
- 1 small red onion, chopped
- 2-3 dried figs, chopped
- pumpkin seeds
- sunflower seeds
- 5 tablespoons apple cider vinegar
- 1 large teaspoon dijon mustard
- 1 large teaspoon honey
- 5 tablespoons olive oil
- salt and pepper to taste
- feta cheese, crumbled
THIS IS HOW YOU DO IT:
Prepare the veggies, grate the carrot, shred the cabbage, chop the figs, grate the apple
Prepare your dressing
Whisk together mustard, honey, oil and apple cider vinegar
Pour the dressing on your salad and massage well
You are done
